Ingredients (for 4 persons)

  • 350 gr. squid
  • 12 mussels with shell
  • 4 pcs scallops (medium size)
  • 140 gr. shrimps (medium size)
  • 90 ml extra virgin oil, plus 10 ml to add to the sauce
  • 1 tbsps garlic sliced
  • 1 tbsps finely chopped pasrsley
  • 80 ml white wine
  • 500 gr. fresh tomatoes skinned and cut in cubes
  • 1/8 tsp crushed chilies
  • Salt

We wash the squid, mussels and shrimps. First we scour the shell of the mussels, and then we cut the squid into rings and the shrimps in to half. Put the olive oil and garlic in sauté pan over a medium heat, and cook until the garlic have a golden color. Then add the parsley and squid and continued stirring for 1-2 minutes. Pour in the wine and when half quantity of the wine has evaporated add the tomatoes. Now cover the pan with a lid, reduce the heat to low and simmer for approximately 45 minutes until the squid is tender. To this point now check the squid and if is tender enough add the salt (but not before this point because the squid it will become hard). Now we add the mussel’s the scallop’s, the shrimps, the crushed chilies and the oil and we stir it for 1-2 minutes. When our pasta is cooked al dente, drain and toss thoroughly with our sauce. Before you serve it check your sauce for extra salt.
